Twice-baked potatoes take the best of two potatoey worlds — baked potatoes and mashed potatoes — and combine them with a healthy helping of cheese to become an irresistible side dish. By reducing the amount of cheese, and sneaking a few cups of pureed veggies into the mashed potato filling, you can turn this steakhouse classic into a satisfying main course with plenty of nutritional value. Use this recipe as a base for adding your favorite vegetables to the mix - swap out the kale for spinach, include a head of roasted garlic, or stir in some mashed avocado to take these potatoes to the next level.
